Basics Butter Cookies 'Petits Sablés'

Sablés, also known as a French Butter Cookie or Breton Biscuit, are a classic French cookie originating from the Brittany region, Bretagne in French (which is where the Breton part of the name comes in). The region is famous for its excessive use of butter, particularly salted butter. The name 'Sablé' is French for 'sand', which refers to the sandy texture of this delicate and crumbly cookie. The traditional shape is round with fluted edges and the tops of the cookies are usually brushed with an egg wash to give them a shiny appearance. The finishing touch, which makes them instantly recognizable, is to score a criss-cross pattern on the top of each cookie.

To create these cookies, it’s best to use a premium quality butter. The butter is the star here, after all! 😊

Swedish Raspberry Cookies 'Hallongrottor'

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes

These little biscuits called Hallongrottor are very simple and quick to bake, flavoured with vanilla and filled with raspberry jam.
The key to successful hallongrottor baking is to work with some very soft butter, and whip it until it is super-soft.
One more thing: hands are your best baking tools, so I recommend you to use your fingers to mix the hallongrottor’s dough.

Here comes an old Corsican recipe from my grand-mother...
Canistrelli cookies consist of flour, sugar, white wine, and flavorings such as anise seeds, almonds or lemon zest, and they are very easy to bake!
Once cooked, the dough is sliced and then baked again, which makes the canistrelli incredibly crispy and have a long shelf life.
